After just reheating a bit of pizza in the microwave (and also a French baguette the other day) I'd like to know why bread goes kind of soft & chewy after a visit to the microwave?

I need a good answer here, not your usual bollocks. Because a microwave heats from the inside and so the moisture ends up on the outside, everyone knows that. I learned that in year 3 of microwave college when I was 11.

About 6 people I know buy bread, am sure several more do but don't want to be associated with a product containing yeast and flour. At a guess would say nearer 11 are bread purchasers. Am sure people on here know of others but don't want to make assumptions
