THIS IS IMPOSSIBLE. I know you said one but I cannot decide. Here are my candidates: Plus ALL CRASH BANDICOOT games. And FIFA 99. Argh, there's just too many.

Played em all but the SNES version is special for me. I still have the main theme as my ring tone.

Stupidly hard. Torn between championship manager Italia on the Amiga 600 and counterstrike pre source.

My house mates and I got completely addicted to this when I was living in my shared house a few years ago.

I'd have to split mine across the generations of consoles I think.
NES - Battle Toads SNES - Super Mario Kart N64 - Goldeneye Gamecube - Super Monkey Ball 2 PS1 - Abe's Odyssey PS2 - Pro Evolution Soccer 5, the most perfect football game ever created PS3 - Portal 2 PC - Championship Manager 2 (97-98)

And the ones you are really looking forward to.
Xbox - Red Dead Redemption. I just love the 'do what you like' style of this game, and I always wanted to be a cowboy. Never got the Zombie cowboy expansion as it is, to me a ridiculous concept. Would have been far better to have either Indians or American Civil War as an expansion. Can't wait for Red Dead 2.
PC - Everquest. The daddy of all MMORPG's
Looking forward to the first true MMORPG on a console, Everquest Next, and Cubeworld looks as though it will be fun, been playing the alpha version on PC.

Favourite games, in to particular order.
Super Metroid- still play it and it's iterations now, it's a fucking impeccable game that captured my imagination and was able to create such a isolated, tense, scary and exciting experience.
Mario 64- Still the best platformer ever created, followed closely by the new Rayman games in terms of difficulty, clever and thoroughly enjoyable platforming.
Final Fantasy 7- The first real next gen open world game RPG I experienced. An adult feeling game that gripped me from start to finish.
Mario Kart 64 / 8. The best karting games period.
Goldeneye- The best movie tie-in. Brilliant story that even when it branched off and expanded, it didn't feel like filler, they were fantastic. Included a game mechanic that I'd love to see more in games, but devs are too lazy / can't figure out how to implement; Giving more objectives in the harder difficulties- that was fucking brilliant. The multiplayer needs no explanation.
Mass Effect 2- So fucking cool, an amazingly gripping story, characters and a universe filled with sci-fi goodness. I've got ME1 but haven't yet got anywhere near finishing and I understand a lot of fans say this is the better of the 2. I had a week off when this came out and chanced whether or not I'd like it. It drew me in and I was on it most days and nights before eventually plugging over 60 hours into it.
The Last of Us- An absolute gem. Amazing story, totally gripping in parts. Brilliant energy between the characters (who are impeccably acted). Naughty Dog smash the bar on this one. Scenes are so fucking tense and they manage to play out just how dangerous humans can be. Just gets better and better. Also gets you in the feels on several occasions. Ran out of suberlatives.
Silent Hill 2- The scariest game I've ever played. Got into my mind and rattled the shit out me. I still look behind going up dark stairs in case I get chased by Pyramid Head.
A Link To the Past- My first real dive into the Zelda universe. I always watched my cousins play the NES games but this was such a big step up. Fantastic gameplay.
The Ocarina of Time- Just so fucking atmospheric. They nailed it. Charming world and characters. At a pubescent time when I was well into tits and masturbation, this took me back a few years into innocence.
Super Mario World- It's timeless, still difficult in parts.
Metal Gear Solid- My first Hollywood experience in games, utterly brilliant.
Super Castlevania 4- put the shits up me with it's incredible soundtrack. Such a great game to play, still holds up brilliantly now.
Special mentions to:
Phychonauts Sonic 1, 2, 3 and Knuckles Skyrim Gran Turismo 3

You just can't beat the old Pokemon games.
RDR was the best PS3/Xbox game for me.

Red Dead Redemption was simply perfect in terms of story and gameplay. I wasted hours simply riding through the desert, playing poker and hunting animals, one of the 2 games this gen I've been back and replayed with the other being....
Assassins's Creed 2, I mostly loved it for the story and the setting, it's extremely simple and easy but still varied enough to remain fun, and that ending is one of the only times I've dropped my controller and said "Holy Shit" sadly Brotherhood went a little downhill, Revelations pulled it back close to ACII but then III just completely destroyed everything I loved about the series and I'm pretty much ignoring it now.
Also I have to mention Mass Effect 1 and 2 (Again 3 was a massive let down) and Portal (The Orange Box in general really)

I've never really been one for spending days and days playing 1 player games, apart from Championship/Football Manager obviously which has taken months away from my life! Off the top of my head the ones that have really had me hooked over the years are Abe's Oddysee, Half Life, Pikmin and Rayman Origins.
I've always much preferred playing games with other people on the same console in the same room. Mario Kart and Super Bomberman on the SNES. NBA Jam on the Mega Drive. GoldenEye on the N64. Tony Hawk's Pro Skater 2, Micro Machines V3 and Worms Armageddon on the PS1. PS2 era Pro Evo was the finest multiplayer football game series ever built. Timesplitters and Gran Turismo 2 on the PS2. Virtua Tennis on the Dreamcast. Super Monkey Ball and Super Smash Bros on the Gamecube. Little Big Planet on the PS3.
